It’s daffodils and leeks all round today whilst joining the Welsh in celebrating St David’s Day.
Not exactly looking like my daffs from Waitrose, but beautifully constructed by Catherine Coombes Flowers in Hampshire.
And now for the leek moment… thrown together with some Welsh goat’s cheese and its an all out Happy St David’s Day Welsh goat’s cheese and leek tart.
This will serve 2 people and takes less than 15 mins to make and then about 15 mins to bake and here’s how….
Turn your oven on 200C/180C fan/gas 6
Heat 1 tbsp olive oil and then soften 2 sliced leeks, should take about 5 mins and then add 2 chopped rashers of back bacon and cook for 5 more mins, then tip onto a plate to cool.
Unroll a ready roll puff pastry and cut out 2 x rectangles about 12cm x 18cm, place them onto a baking sheet and using a knife make a border about 1cm from the edge.
Mix 1 tbsp of creme fraiche with 1 tbsp mustard, dijon or wholegrain, whichever you prefer, then spread over the pastry but not over your borders, then spoon your leek concoction over the top, put a slice of WELSH goat’s cheese on the very top and wop them in the oven for about 15 mins or until they look golden.
Here’s the ingredient list:
1 tbsp olive oil
2 rashers of back bacon
1 sheet ready roll puff pastry
1 tbsp creme fraiche
1 tbsp mustard
2 slices of Welsh goat’s cheese (you’ll have to buy a log)
